- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup grated Parmesan cheese (freshly grated for best flavor)
- 1 cup breadcrumbs (plain or Italian seasoned)
- 2 large eggs (beaten)
- 2 tbsp olive oil (for drizzling or brushing)
Instructions
- Preheat your oven to 400°F (200°C)
- Line a baking sheet with parchment paper or lightly grease it
- Pat the chicken breasts dry with paper towels to help the coating stick better
- In a shallow bowl, mix the Parmesan cheese and breadcrumbs
- In another bowl, beat the eggs
- Dip each chicken breast into the egg, then press it into the cheese-breadcrumb mix to coat
- Place the coated chicken breasts on the prepared baking sheet
- Drizzle or brush a little olive oil on top of each piece to help them get golden and crispy
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C)
- The crust should be golden brown
- Let it rest for 5 minutes before serving
Notes
Use fresh Parmesan for a richer taste. Panko breadcrumbs can add extra crunch. Pound chicken breasts to even thickness for uniform cooking. Freshly grated Parmesan melts better and tastes richer than pre-grated.
