Description

If you’re craving a sweet treat but need to stick to a low-carb diet, Keto Cookies are your new best friend. These delicious bites are perfect for satisfying your sweet tooth without derailing your goals, quick to whip up even on busy days.

Ingredients

Scale
  • 2 tbsp butter (for richness)
  • 2/3 cup natural chunky peanut butter (or any nut butter)
  • 1 cup unsweetened shredded coconut (for texture)
  • 1 tbsp cocoa powder
  • 4 drops liquid vanilla stevia (or any low-carb sweetener)

Instructions

  1. Gather all your ingredients and a microwave-safe bowl. Line a small tray or plate with parchment paper.
  2. Melt the butter in the microwave for about 20 seconds.
  3. Stir in the peanut butter and cocoa powder until smooth. It should look like a rich chocolate base.
  4. Add the shredded coconut and stevia drops to the mixture.
  5. Stir well until everything is evenly combined. The coconut adds a nice chewy texture.
  6. Scoop tablespoon-sized portions onto the parchment-lined tray.
  7. Freeze for 15 minutes, then store in a sealed bag in the fridge.
  8. Enjoy cold!

Notes

Use natural peanut butter without added sugar. Stevia drops avoid the bitter aftertaste of some sweeteners. Taste the mix before freezing and add extra stevia if needed. Cut parchment into small squares to separate cookies and avoid sticking.
