Set your Instant Pot to “Sauté” on high. Add the olive oil. Once it’s hot, sear the roast on all sides until browned. This builds a deep flavor foundation. Take the roast out and set it aside.

Add the onion and carrot chunks to the pot. Sauté for 3-4 minutes just to soften them a bit. Add the garlic and cook for one more minute until fragrant.

Pour in about 1/2 cup of the broth to deglaze the pot. Scrape up all those tasty browned bits from the bottom. This is pure flavor!

Turn off the sauté function. Stir in the rest of the broth, tomato paste, Worcestershire sauce, and thyme.

Place the seared roast back into the pot. Nestle the bay leaves in the liquid around it.
