- 2 cups rolled oats (old-fashioned)
- 1 cup fresh or frozen blueberries
- 2 ripe bananas (mashed)
- 1/4 cup almond butter
- 2 tbsp maple syrup (optional)
- 1/2 tsp cinnamon (optional)
- 1/2 tsp vanilla extract (optional)
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line or grease an 8×8-inch baking dish.
- Mash bananas in a large bowl. Add oats, almond butter, maple syrup, salt, and optional cinnamon/vanilla. Mix well.
- Gently fold in half the blueberries. Pour mixture into baking dish and spread evenly.
- Top with remaining blueberries. Press lightly into the surface.
- Bake for 25–30 minutes until golden and set. Cool for 10 minutes before slicing. Serve warm or store for meal prep.
Notes
Add more oats if batter is too wet, or a splash of milk if too dry. Boost flavor with cinnamon or vanilla. Store portions in the fridge and reheat with a bit of milk for best texture.
