Description

If you’re looking for a quick, tasty snack that your kids will love, these Banana Chocolate Chip Bars are a game-changer. They’re simple to whip up and perfect for using up those overripe bananas sitting on your counter with minimal prep.

Ingredients

Scale
  • 2 cups all-purpose flour (or gluten-free blend if needed)
  • 3 overripe bananas (mashed, for sweetness and moisture)
  • 1/2 cup unsalted butter (softened, or use coconut oil)
  • 3/4 cup brown sugar (light or dark, for richness)
  • 1 cup chocolate chips (semi-sweet or milk, your choice)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large bowl, mash the overripe bananas until smooth.
  3. Add softened butter and brown sugar, then mix until creamy. A fork or whisk works fine if you don’t have a mixer handy.
  4. In a separate bowl, whisk together the flour, a pinch of salt, and 1 tsp of baking powder.
  5. Slowly add the dry mix to the banana mixture, stirring until just combined. Don’t overmix!
  6. Fold in the chocolate chips, then spread the batter evenly into the prepared pan.
  7. Bake for 25-30 minutes until golden.
  8. Let it cool before slicing into perfect squares for the family.

Notes

Use overripe bananas for the best flavor. Mini chocolate chips work great for even distribution. Mash bananas ahead of time and store in fridge for up to 2 days. For fudgier bars, slightly underbake by 2-3 minutes.
