Description

This Apple Fritter Bread transforms the classic donut flavor into a luscious, layered loaf. With juicy apples, warm cinnamon, and a buttery glaze, it’s a comforting treat perfect for fall or any season. Ideal for advanced bakers to showcase creativity and technique.

Ingredients

Scale
  • 2 cups all-purpose flour (or gluten-free alternative)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 tbsp baking powder
  • Pinch of salt
  • 2 large apples (peeled and chopped)
  • 2 tbsp sugar + 1 tsp cinnamon (for apple layer)
  • 1 cup powdered sugar (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. Whisk flour, baking powder, and salt. In a separate bowl, cream butter and sugar, then add eggs and vanilla. Mix in milk and dry ingredients alternately.
  3. Pour half of the batter into the pan, layer with half the apples and a sprinkle of cinnamon-sugar. Repeat with remaining batter, apples, and cinnamon-sugar.
  4. Bake for 60 minutes or until a toothpick inserted comes out clean. Cool slightly.
  5. Whisk powdered sugar and milk to make glaze. Drizzle over warm bread and slice to serve.

Notes

Use tart, firm apples like Granny Smith for texture. Apply glaze while the bread is warm to let it soak in slightly. Avoid overmixing to keep the loaf light and fluffy.
